Omg... I just found the hot key for nonbreaking hyphen. It's Command+Shift+"-" in Microsoft Word for Mac 2011. Why oh why they have to use Option+Shift combinations for nonbreaking space but Command+Shift combinations for nonbreaking hyphen? It's very annoying! Indeed it's not a problem to memorize those hot keys; however, why do the Microsoft designers think more for the users? I love to use Word and I love all those useful functions in paper writing, but I will love them more if they are easier to access. Microsoft, please work harder to make things simpler, not more complicated!
